Greetings, Clay! Just wanted to say that I made a chocolate beet cake with your lovely pecan oil and flour, and it is specTACular. I've made toasted pecan flour before with my Vitamix, but your pecan flour is much more fine and therefore much more baking-friendly. I can totally see where it would make a great base for a smoothie! That's so great that you've figured out a way to turn what would otherwise be a scrap byproduct of your oil-making into a wonderful flour. Very, very cool. I'll be curious to see what you come up with next. :-) And like I said, if you ever want to toss around ideas for protein mixes or anything else, feel free to shoot me an email or give me a call. I just wanted to tell you that someone gave me 2 bottles of your oils. The infused sunflower oil and the Pecan oil. I just got home with the bottles and immediately heated up some Italian bread and dipped it into the infused sunflower oil, IT IS AMAZING!!! The taste is absolutely indescribable. I can't wait to bake my first chicken using this as the coating .I will keep you in my prayers that this endeavor pays off. I can't wait to share with my family and friends. I'm sure the pecan oil is just as great. I just haven't used it yet.Thank you for making these.
